Conversely, Cognac is the absolute perfectionist. It is the most serious, meticulous, and refined version of brandy, protected by strict French law. The golden rule of Cognac is non-negotiable: it must be produced exclusively within the Cognac AOC delimited area in Western France.

Beyond geography, the production is bound by rigorous standards. It requires specific white grape varieties, predominantly Ugni Blanc, grown in the unique chalky soil of the area. It must undergo double distillation in traditional Charentais copper pot stills and must be aged in French oak barrels, specifically from the Limousin or Tronçais forests, for a minimum of two years.
